Quick and Easy Vegan Snack Recipes for Exam Season

This is a compilation of quick and easy vegan snack recipes that have gotten me through Hell Week. Enjoy! :)


1. The Green Smoothie

Ingredients:

  • ½ an avocado

  • 2 cups of spinach (not pressed down)

  • 1 apple (you can add more if you want your smoothie to be sweeter)

  • 1 cup of almond milk/soy milk (unsweetened)

  • Optional: sugar or maple syrup, ice, lemon juice and mint leaves.

Instructions:

  1. Cut the apple into small pieces.

  2. Peel the avocado- and sing the song while doing so.

  3. Add the apples, avocado, and spinach into the blender.

  4. Add the almond milk into the blender. If you want to add some ice, you can add it here.

  5. Blend!

  6. Taste your smoothie and adjust the flavors to your liking :)


2. Coffee :D

I mean, we all need that little caffeine boost during Exam Season, right? A little coffee hack and some ideas to spice up your cup of coffee.

Ingredients:

  • Coffee of choice

  • Almond milk/Soy milk (unsweetened)

  • A sweetener of choice e.g., sugar and maple syrup

  • Optional: Cocoa powder, cinnamon, boba bubbles (yes, the ones that they put in bubble tea)

Instructions:

  1. Fill an ice cube tray with almond milk and place it in the freezer for a couple of hours or overnight! If you are tired of your coffee getting diluted by the ice, this may be something you would want to try out.

  2. To spice up your warm cup of coffee, try adding cinnamon, dark chocolate/cocoa powder, or paprika! For cold cups of coffee, try adding boba bubbles! It might not be the best option during exam times, though as they are quite addicting to chew on.


3. Chocolate Coated Rice Crackers

Ingredients:

  • Rice crackers

  • Chocolate of choice

  • Optional: sprinkles, chopped almonds

Instructions:

  1. Melt the chocolate in the microwave or over the stove. If you are using your microwave, make sure you are using low heat and do it in short 20 second intervals (or less) to avoid burning your chocolate.

  2. Dip the rice crackers into the melted chocolate, top them off with some sprinkles or chopped almonds and consume! Freezing them does taste better, especially if you top it off with a scoop of chocolate, but they taste great warm as well!


4. Strawberry Almond Milk Ice Cream

Ingredients:

  • 2 cups of frozen strawberries

  • 1 cup of almond milk/soy milk (unsweetened) (but you can add more if the blender doesn’t work)

  • 2 tbsp of sweetener of choice (but you can adjust this to your preference!)

  • Optional: 1 lime/lemon

Instructions:

  1. Pour the strawberry into the blender.

  2. Add the almond milk in ½ cup intervals into the blender.

  3. Add your sweetener.

  4. Blend and taste! You can add more sweetener or your lime/lemon juice here for a more refreshing taste, perfect for summer exams!

  5. Pour the blended mixture into an airtight container and leave them in the freezer overnight.

  6. Enjoy!
